Mercy has been put on a heart healthy diet now.

We waitied two weeks for test result on her heart, and finally got them yesterday.

As most of you know and understand, the way I cook, is not exactly heart friendly. I need some new ideas, stuff that includes chicken for the most part, cause "lean" beef, just aint got it.

We have had beer braised chicken salad last night, and noodle salad tonight with the same beer braised chicken, and lots of vegetables. I have not put any salt on the chicken, only sage, oregano, parsley, basil, and black pepper, onion powder, and garlic powder.

trying to stay away from anything with salt. bought a bunch of chicken tonight at the grocery store.

not to make it sound bad, but , some of you old timers, and even the younger ones, I need some help with hearth healthy meals. keep in mind that I grill/smoke A LOT!! which I know can be better as far as the grill part goes, smoking tends to need fat.

help an Idiot out, I gotta take  care of my baby.

There are beef dishes you can make that are low fat and don't require any salt to taste good.  Naturally the best tasting cuts of beef have some fat, but if you use the right combination of marinades and seasonings, very lean beef can be tender and taste great.

 

The leanest cuts of beef are top round, tenderloin and sirloin. The last two don't require a lot of marinade to make them tender but they're more expensive than the top round which is basically thick muscle and you need to do something to it to make it edible. If you marinade a piece of top round overnight in something like red wine vinegar or lime/lemon juice, it breaks down the muscle fibers and makes it pretty tender. Get a couple forks and poke holes all through the meat so the marinade can get all the way in. Throw some extra light olive oil in the marinade (or something like Wishbone italian salad dressing) and it makes the meat a lot more juicy after it's cooked. Seasonings can be just about anything you like (except salt). Salsa is great in marinade, onions, garlic, it's all good. And remember when you grill meat the browning from the grill gives meat a salty taste without the salt, although I'll bet most doctors would probably think that's as bad or worse than salt.  You can also make beef stew or vegetable beef soup with top round as long as you cube the meat and let it simmer for at least a couple hours.

Simplemod, get your wife a raclette set, she knows what a raclette set is, just use low fat mozarella. Fondue is also a good idea, but only fondue chinoise. Make sure she stays away from cheese cake, sweets and any junk food. Take her out for sashimi, not sushi, stay away from rice of any kind. Get a dog, make sure she walks the dog at least twice a day.  MacDonalds, Burger Kind etc are a big no no.  Roasted or boiled potatoes, nothing deep fried.  BBQ everything and use very little or no oil if possible. Stay away from "powders", use fresh stuff: fresh garlic, fresh onions.  Get fresh fruit, if she's hungry make her eat fruit.  Open your fridge and chuck the sour cream, ice cream and whipped cream in the garbage. My brother's doctor told him not to eat anything white and he lost 40 pounds over a year. No carbs from flour and rice cuts a ton of sugar out of your diet.  

 

I have to draw the line at cheesecake. I will happily die young as long as I get my cheescake fix.

Thank you both for the replies. I will try the lean cuts in the marinade. I have rarely done lean beef, but will give it a go.

As far as fast food, and junk food, that's a rarity for us anyway. We cut that stuff out when we moved outside city limits, now it's just once in a great while, and even then it's usually subway instead of burgers, lol.

and her doc said the same thing about nothing white, and told us to change all possible things to whole grain. and we bought pears and oranges last night instead of junk snacks.

Fat in your food is not your enemy. Refined, highly processed carbs are. That is what causes inflammation in your arteries and joints. Saturated fats are of course not good but the human body is designed to eat fat. Your body of course needs sugars (it is what runs your brain) but it can also produce them on its own when operating properly. Do your research!

Trick to cooking Top round I have found is do not cook it cold allow it to reach room temp and put in a hot non stick pan with what you would like....Also I never freeze steak always cook fresh from the butcher .....Works for me have/had hypertension for many years and at age 32 had a mild heart attack (heart cath too) so started eating healthier

and my Blood pressure is managed w/o meds (no salt)100/67 few days ago.....Chicken if u must eat it bake it or I have for years boiled chicken and pork first then cooked however you like and I must confess I am a thigh guy so I d-bone them and boil for 10min then bake.....Look on the web for heart healthy meals ....Cereal is a good morning starter

 

 

 

@Joe very good point as I do the same but I,m the dog so the wife walks me...Then I chase her ass home for some bed therapy  :w00t:

SSHHH, don't tell nobody, but i look at pinterest a lot. There a lot of great ideas on there, even for guy stuff.

 

 

and thanks again for all the input from everyone. Like I've said, I have never been health conscious, but I'll do what I must for the sake of my wife.

lucky for us, we do like lots of vegetables, so that part is easy. I will try some of the meat ideas, and I do like to start cooking from room temp whenever possible.

Damn, that must take days to cook. I generally prefer the temp to be more around 400 on my grill. :hrhr:
