Melt butter in a heavy-bottomed pan over medium heat and fry the garlic andham for about two minutes, stirring regularly. Add the mushrooms and green chillies, and continue cooking until themushrooms start to brown and chillies begin to soften. Remove from heat and stirin the sour cream, parsley and oregano. Season with salt and pepper. Turn the mixture into a small ovenproof casserole and allow to stand forabout 10 minutes to blend flavours. Make six hollows in the mixture and break an egg into each. Season the eggswith salt and pepper. Bake for about 20 minutes or until the egg whites are setthen remove from the oven and sprinkle with grated cheese. Return to the oven and cook until cheese is bubbling. Serve with toast orcrusty French bread and a dash of hot sauce. Dan recommends African Hot Sauce orPennine Fire Sauce.
