This is my second attempt at homebrewing beer, I messed the first one up by storing it too warm while fermenting. This second one went well and is now being stored for another 2 weeks so the yeast and turn the priming sugars into bubbles. This is Nut Brown Ale.

Been brewing off and on for years... awesome the selection of pre-canned beers you can order and reconstitute yourself.  The cap-able empties can be purchased at you local beer/wine/spirits outlet.

I have a friend that has been homebrewing since the 80's and has sold me bottles and even capable champagne bottles. I drink enough beer myself though so most of those bottles were already mine lol. Im just starting out so im using malt extracts

Thanks for letting me know! Ive already invested like $250 in this for getting started and trust me I've been drooling looking at the more fancy pro stuff. Next thing I want to get is a better kettle and something to keep my fermenter cool. I live in florida and been putting my 5 gallon bucket/carboy in a 10 gallon metal bucket filled with water and frozen bottles to keep it cool. I ruined my first brew because it was too warm and ended up tasting horrible. 

Do you think its ok to keep my bottles just in a box? I took my thermometer out of my cigar humidor and put it on top of the boxes and its says right now its 76 degrees. Is that too hot? I read that you want the bottles to be a bit warmer than your fermenting temp and that the highest you could go is 80 degrees.

Well done.  Haven't brewed my own beer in years.  Doing my own wine at home for a while now.

Find its a nice hobby sort of not to mention much cheaper than buying.

Nice thing about home brew is that there really is a large selection available so nice to change it up.

I'll be sure to. Gotta let the bottles sit for 2 weeks before i can put them in the fridge. So thats like feb 13th, Ill prob update this post with pics of the beer and how it tastes ?

Also, invest in glass carboys for fermentation, plastic scratches and eventually bacteria will live in those scratches ruining your brew!

Took about 5 weeks to get a real head on this beer to form. Still have a lot of bottles left haha. Can really taste some of those bad alcohols in the background but for sure tastes like a brown beer with those nutty flavors. 

 

Going to be brewing a cream ale soon and will be posting pics

If I remember for bottled beer sterilisation (of the bottles not you lol) was very important, it looks very nice to me.

be sure to spread starsan on everything otherwise u get infected beer. Maybe that is what u taste when u say bad alcohols.

i soaked everything in StarSan. At least 30 secs on everything. Gave a beer to a friend who brewed for 30 years now and will be seeing what she thinks later today. Imma be real upset if I got any germs in there ?

Is it a brew from some kits or all grains ?

i decided to stop the all in one kits and spare some money to go all grain in a few months or so.

Dont be upset if its bad, just try to find what went wrong and do better next time.

Of course the first brew wont be perfect, Im not beating myself up. The beer is still drinkable which is why i dont think its infected. My friend didnt try it yet cause she wanted to share it with her friend and said she would call me after she did. I really think the problem is that i just let it get too hot. Not a hard thing to do in Florida.

Im just using extract kits at the moment. Dont have the money right now to make an all grain set up. Plan doing so in the future though.

Fermentation Temp. next to Sanitation is the most important thing. Too hot and you will get that Butterscotch flavor with Diacetyl  along with Fusel Alcohols, other off flavors include sherry-like, peach or banana...

Finally got back from my friend who has been brewing for 30 years. She said the beer was very much drinkable but she could easily tell it was fermented too warm & too quick. ?

Tomorrow I will be making the wort for my cream ale. Changes I am going to make is I will be fermenting it in a carboy and will be wrapping it in a wet towel to keep it cooler. It will also be sitting in a large bucket filled with water and frozen water bottles that I will be changing everyday. I'll also be dipping the towel in the cold water a few times a day to keep it wet and cool.

Since its spring here now it will be warmer than when I brewed the brown ale. Gonna be around 84f this week so I'll keep an eye on the water's temp. Good is that technically in south florida we only have 2 seasons, the wet and the dry seasons. Spring is part of the wet seasons and the sky should be dark and rainy a lot. 

I'll be making a new thread for the cream ale pics
