We don't but the store bought shells or taco seasoning, we fry our corn tortillas and use our own seasonings, chop up onions, jalapenos, tomatoes and grate a block of cheese. I don't care for shredded cheese in a bag. I also make my own salsa verde. I boil tomatillos, with jalapenos, a serrano pepper, and a poblano pepper. Blend those together with garlic and salt and about 3/4 cup of the water that was used to boil with. Salsa turns out perfect.
