Just google to make sure they will work. The fresher/newer the better. That means fresh from the trees work better. They have more PECTIN when freshly picked. You do not need to put cinnamon in them if you prefer not to. RED APPLES make red jelly, common sense. The recipe says 18 cups of apple juice, that is the juice I drained off from the apples I boiled. The recipe mentions draining the apples overnight but after 3 hours you won’t gain very much so I only drain for 3-4 hours. DON’T try and squeeze any juice from the cheese cloth you will make the jelly all cloudy! Enjoy!
