Most of the stuff bought at the grocery store is picked green and ripened with Ethylene gas. I used to have a job in a greenhouse watering Tomatoes all day all week 8 gallons on each plant. I nearly went crazy had green hands and smelled like Tomatoes all the time. They are pretty much tasteless It's the lack of key UV wavelengths, & maybe some far - infrared that caused greenhouse tomatoes to be bland. Picking a mater when it's still mostly green doesn't negatively impact flavor. You can pick one ripe & you would be hard-pressed to taste the difference from one picked from the same plant when mostly green & allowed to ripen on the counter...
