I forgot to take a picture of it, but I will next time.
Prepare catfish by skinning, gutting, and removing head. You can use fillets, but leaving it whole will give more flavor.
Make a bowl from alluminum foil and place the fish in center, sprinkle a generous ammount of :
Basil
Oregano
Ground Sage
Zatarain's Creole
Slap Ya Mama ( if you like a bite)
Chop one small onion, and the greens too
Slice tomato about 1/4 inch thick, then cut slice in half across center, place around fish.
Pull up edges of foil to make the bowl shape, then pour in about 1/4 cup of beer, just enough to make it steam good.
DO NOT close off the foil, just pull it together enough that it won't fall open, have to leave it open so the smoke can get in.
Place it on as far from the fire as you can, and let that baby smoke for a while, mine smoked about 3 hours in meadium heat, using charcoal and cherry wood
