Now, I'm not a huge Kielbasa fan...but we had 3 5 inch links....(small, I know )
Cut up the links into slices and fried them with a large yellow onion....couple of dashes of fresh ground pepper too.
Then I boiled 2 cups of water with 3 chicken bouillon cubes, brought to a boil, then added 2 cups of minute rice and removed from heat, let sit for 7 minutes cuz of the bouillon.
In a large bowl I combined all of the above and added a can of diced tomatoes and green chilies, mixed well, then added about a cup of finely grated cheddar blend cheese and monteray jack cheese.
Put it in a casserole dish and baked at 350 for 30 minutes...removed from the oven and topped with more cheese, let sit for 10 minutes...then serve!
I don't follow recipes...so add what you wish, next time I may add some diced green peppers too! (But this is what I had in the kitchen)
