Using Nvidia for video streaming in Waw

Here are two examples that I took but the thing is the videos in my library are HD 1080P but the videos on Youtube are 720.  I don't understand why when they start out as HD!

This is really confusing to me as well, my videos are also 1080p and when I initially upload them, they only go to 480, and after a day or two end up being 1080. However, the 1080p videos I've posted are worse quality than your 720p examples? Wtf?!
