When my parents lived in New Orleans....well,not in the city....they lived on the North shore of lake Pontchartrain....anyways,when I was there, I would ,when I could,go down to the French market.The French market is like a huge flea market(kinda) in these big open sided buildings in a row for blocks..You can find all kinds of cool stuff from food and spices to clothes to pretty much anything.....There was this one shop that was dedicated only to hot sauces,very overwhelming for a hot sauce lover like me.In the time that I use to go down there I would always try different kinds....now this was at least 20 years ago but the hottest I had was "Cajun Hell XXX " this stuff was just hot as fuck to the point that if it did have any flavor that buy the time it hit your tongue...all the taste buds were scorched and you couldn't taste anything.There were some good ones and some bad,I have some of the good one bottles around here somewhere...when I find them I will let you know but.....after trying a lot of hot sauces...and you might think I'm wrong which is okay but one of my favorites is the original Tabasco sauce (which is out of Louisiana) and the green Tabasco sauce.I'm big on flavor,it is essential to a good hot sauce....not just the heat.I do like mixing...there is this one sauce out of New Orleans called Tiger sauce...you can find it in Kroger's grocery store if you have one around you.I like to put some Tabasco in that so you have a sweet tangy hot sauce.....Good luck with your search for your favorite hot sauce. ...remember bread and/or milk not water to take the heat off.
