I bought it today, and it didn't ask me for 3 disks, just the 2 I got!!!

It could be a number of things, but it isn't the servers.

Personally, I would send both back, wait til SP1 comes out for Windows 7, then buy the full fat version, cause if your HDD dies, you will have to install Vista and then the upgrade each time.
