I split them down the back, remove the bones. Leave the skin on and lay the 2 halves on tin foil on a flat cookie sheet drizzle lemon over the flesh, salt and pepper lay lemon wedges and dill over the flesh. Take a piece of Maple or apple wood that has been soaked in water for awhile. Heat the BBQ (Propane) to about 350F and place the wood down by the flame but not too close as you want the wood to SMOKE and not catch fire. Place the cookie sheet with the fish on the grill close the cover and check often. Don't over cook the fish.
