    Adding more fat with butter may seem counterintuitive, but even if you drain some of the sausage fat first, the butter adds a unique richness.
    And of course, the flour has to cook long enough to brown & lose its flour taste & contribute its own depth as it absorbs the pork & butter. 
    The ratios I give is a good starting point.

    Honestly, when I saw your title of this, I went to HOT BROWN, convinced that was what you were going to be showing... I lived in Lexington, KY for college, and we went to Columbia Steakhouse all the time.  The Hot Brown is what we college kids wanted mostly lol.  Never made it myself, but we have a smoker, I should smoke up some turkey and make this for everyone who has no idea what a Hot Brown is here in silly Knoxville.  https://en.wikipedia.org/wiki/Hot_Brown   OH, I just realized I have not had anything to eat today... no wonder.  I am hungry.
    Columbia Steak House in Lexington, KY is known for its famous "Hot Brown" and the "Nighthawk" special. It's also considered the oldest restaurant in Central Kentucky, opening in 1948. The restaurant offers a variety of traditional menu items, including steaks, chicken, and seafood, along with their signature dishes.    More Details: Hot Brown: A classic Kentucky dish consisting of white bread layered with sliced turkey, ham, a creamy cheese sauce, tomato slices, and bacon. Nighthawk Special: A popular dish featuring an 8-ounce tenderloin smothered in garlic butter, a baked potato, a Diego salad, and homemade rolls with honey butter. Other Specialties: Columbia Steak House also offers crispy Fried Banana Peppers, Lamb Fries, and the Diego salad with garlic and celery seasoning.     I just find the flavor richer with flour in this instance.
    Texture seems more pleasing to me, also.

    Biscuits 
    Pound of sausage (Tennessee Pride Hot, this time)
    Couple tablespoons of butter 
    ~1/3 cup flour
    3 cups milk
    Seasoning 
    Brown sausage, add butter & stir for a couple minutes, add flour & stir for a few minutes until browned & bubbly, slowly add milk while continuously stirring--about 5 minutes.
    Add salt, pepper etc...start with a pinch of each.

    Ive been a Senior Admin working with Rugger for 18 years, hes been here 20 years and I finally met him in the UK on the 9th May 2025.
    It was fantastic to meet him and his family and friends in Lyme Regis Dorset UK.
    We had a great night remeniscing everything we've had to deal with in >XI< over all those years......I don't think anyone would believe the stuff we've dealt with and the hard work we've put in to keep this clan going.
    we spoke of so many members who are still here.those who left and those who have sadly passed.
    It was an honour to meet Rugger and I would not have missed the opportunity to meet this legend.
    I also  met Sittin Duc and his mates,Edd The Duck and his wife also,Totty and NinjaBazZa ...what a great bunch of people.
    If any of you guys want to upload your pics here too it would be great.

    Right on. I used a ThermoPro dual probe to calibrate the oven & monitor the internal temperature. 
    Glad you liked the photos. 
    It did turn out nicely & tasted sufficiently good, although it'd been even nicer if part of its journey would've included a smoker. 
    Was just curious how long it takes without a crutch vs cooking the whole time wrapped.

    No I don't think you need a special gadget to cook meat. It is just most people don't think of cooking something for close to 24 hours in a oven at those low temps. With the new app controlled pellet smokers and some of the smokers out there I just thought since you live in BBQ central you had sumpin difnt. But it looked darn good

    I simply baked the shoulder in the oven.
    I do have a crock pot & a pressure cooker.
    Also have a couple old-school Poppery 2 air popcorn poppers for roasting coffee in small batches.
    My 3 favorite & most used tools are ThermoPro dual probe thermometer, a laser thermometer & an Ozeri digital kitchen scale for weighing ingredients. 
    When you have a cut of whole meat, most all bacteria are on the surface, not inside; so as long as you get the surface up to safe temps, there's no particular rush to get the inside done.
    Why'd you think there was a special gadget needed for slow cooking a piece of meat?
    BTU's are BTU's regardless of the device...

    Made coleslaw & mac 'n cheese.
    Portioned extra into 8oz servings in zip lock bags. 
    Will probably make tacos with some next week.

    The Atlantic Salmon has been in real bad shape lately. 99% of the fish I caught were released. Stripe Bass numbers have increased to the point there are barely enough Salmon to keep the population going. The stripe bass numbers have exploded in this river system to well over 1.25 million. This high count of Bass have wreaked havoc over the Atlantic salmon. Not sure the salmon will ever recover.
    The video is short and only shows 2 jumps from the fish. Rest assured it was released very quickly. I have a camp across other side of the river. It's beautiful and restful spot. I haven't slept at my camp since 2018 as I was supporting the parents. Looking forward to having a few sleepovers lol.
