This is classic Umami, like spaghetti sauce + parmesan, or pizza sauce & mozzarella...look up Umami pairings & you can mix and match your own pairing you perhaps never considered. Cultures across the world and time have discovered these pairing without knowing the chemistry behind it...until recently.
