  1. I've recently read of someone using a pizza stone & pizza steel together. Apparently to buff up the heat retention. I don't know how ~600F is getting near Neapolitan range. Usually it's in the ~900F range afaik. 550-600F is the range I bake the pizza for about 6 min. I turn it 180 degrees after 3 min. Then after 2 more minutes, I move it to the bottom rack & turn on the bottom broiler to crisp the bottom for the last minute. I use a pizza screen & get nice results.
  2. Stay safe. Get inland if it's applicable.
  3. Welcome!
  4. Lol! All it takes is following directions and - like anything else - practice. Thanks, though.
  5. Hey Prle. Good to see you post. I believe he pronounces it like pearl with a long 'e' on the end.
  6. This is as smooth as it gets; I don't use any flour, just let it cool in the oven for 4 or 5 hours so it don't crack. Only ingredients are 4 packages cream cheese, 1 1/2 cups sugar, 3/4 cup milk, 4 eggs, & 1 cup sour cream.
  7. Happy Birthday(s)!

  11. I was gonna say, somebody call security.
  12. Minus the egg for me, looks great. This pizza here, I made with bread flour this time, instead of all-purpose. Much chewier crust. I bake it at ~550 F on the top rack for about 4 minutes, then I rotate it 180 degrees and move it to the bottom rack, for 2 more minutes, with the bottom broiler element turned on to crisp the bottom. I use a pizza screen to bake, instead of a pizza pan or steel or stone.
  13. looks good. except for the egg. is that an egg?
  14. Love me some homemade pizza!
  15. Sure, being a good leader is important. As is any other position in a company or team. Getting a job, maintaining a secure position, being promoted; it's all up to the potential employee to bring a skill set that an organization will value. And to build upon it. A good attitude should be a given, regardless of the nature of the job. Yet there are many I've encountered over the years in many positions that bring their negative attitudes or problems to work with them & toxify the work environment. I just tell people, if the manager hasn't after some time that we're here to do a job, not listen to them complain or have them slack. At the very least, they then avoid dumping around me.
  16. It's my view that it is an employee's responsibility to have an attitude conducive to the success of their assigned task(s). It's not the employer's job to help them feel better about the job and have a better attitude. That goes from washing dishes, to stacking bourbon barrels, to landscaping, roofing, nursing, delivering pizzas... anything. If a person is immature, impatient, lazy, unmotivated, introverted, unfocused... whatever the issue may be, the onus is upon them to improve. Especially if they're unwilling to take help and advice, then they should be fired.
  17. Welcome bro!
