  3. Most of it. It's easy to maintain cultures in your fridge. Once every 10 days or so, you remove 3/4 of the dough & replace it with more flour & water. Can maintain it, well...forever. Makes a big difference in the flavor of the crust. The France & San Francisco cultures are nice. The former was collected from a bakery on the outskirts of Paris that's apparently been in business for over 150 years. The latter is a nice sourdough & has a yeast culture that doesn't compete for food with the lactobacillus bacteria that lend the unique sourdough taste to the dough.

  6. If you didn't live quite so far away, I'd happily send some your way. All my friends are chubbier than they otherwise would be. Man, those blueberry muffins I made a few weeks ago were downright sinful; the blueberry-banana ones were borderline illegal. Gustatorily hedonistic. Still gotta post those & many other videos of my cooking when I have more time to edit them down.

  8. Crust was, well, crusty, but that's ok, it was just a handle for the business end of the pie. That Margherita pepperoni is so well-worth the modest extra cost; tastes orders of magnitude better than most any other I've sampled. It's texture is more refined & pleasing, also.

  13. Welp, they've got all the food groups: Grains & pastas, fruits & veggies, meats, dairy; what's not to like? Now that I think of it, so does wonderful chili...after you add the obligatory dollop of sour cream or a handsome hillock of shredded cheese! Fuck me, now I'm hungry again.

  15. Nice! I bought one of those Instant Pots for like $60 when it was on discount during the Xmas season; haven't even had time to take it out of the box. Been reading-up on these popular restaurant recipe approximation sites, gonna make some chicken tenders & the like with it. Been a while since I've used a pressure cooker. Start posting some pics of your gastronomic creations!

  17. Any more sausage on there & it would be swimming in grease... to my taste, anyway. What may seem as a lot of onion is actually, probably the white of the thick-strand Mozzarella blending in with the onion. Probably next time I use onion, I will saute it firstly, so that the water from them doesn't make the end product as moist when finished.
  18. Saves grease splattering everywhere. When I fry, especially meats, I start of with a very hot pan to get that initial sear on the meat, be it sausage, beef, or whatever; which causes considerable spitting & splattering. Can't stand the look of greasy film on chrome...& on the wall, & on the counter... If you're talking about the last picture... that'd be my cat lurking, as usual when I'm in the kitchen.
  19. Victorinox chef's knife, these are the people that make Swiss Army Knives! Was stoked to discover this. It's razor sharp & well-balanced. A real joy to use.

  21. I don't have to prove I'm not 'on' anything; they have to prove I was. Innocent until proven otherwise. Some ham-fisted, farcical attempt at a Nystagmus Test after suggesting & passing a breathalyzer, without having me do any balance, blood or other tests is on them, not me.
  22. The Doordash platform sends out orders & the first dasher to accept the order goes to collect it; this would mean DoorDash was behind it.
  23. Never heard of this game until seeing them play it. Was fun to watch.
