They take a bit if work to keep them clean around the skin folds. So many people acquire animals before they really think it through and end up getting rid of them. Really glad you took her in. I see she’s spoiled already lol. Wayne

Here is another Lebanese dish called Kibbie or Kibby. We eat it RAW or cooked. I ground my own meat. I mostly use beef eye of the round in the Middle East lamb is mostly used. I remove all traces of fat, grind the meat twice. For every pound of meat I wash and soak 1 cup of cracked bulgar wheat. While the wheat is soaking I purée 1 onion per pound of meat. To the onion add salt pepper mixed spice all spice cumin cinnamon and mint. I then add the the onion and spice mix to the CHILLED MEAT. I drain the water from the wheat. Using my hands I squeeze as much water out of the wheat as I can. Add the wheat to the meat and mix thoroughly. Let the kibbie stand in the fridge for about 30 minutes or until the rest of the meal is ready. Put the Kibbie on you plate pour olive oil over it and eat with pita bread. I’ve added pictures showing raw and cooked Kibbie. The cross on the Kibbie signifies our Christian Heritage. My family used to me Maronite Christians from the mountains. You can also see Lebanese string beans in meat and tomato sauce and grape leaf stuffed with rice meat and tomato sauce.

My Dad’s parents immigrated from Lebanon around 1904. We have continued to enjoy many beautiful dishes from the mountains of Lebanon. These are called Fatayer. We use a yeast dough rolled our flat add the filling and fold the dough in a triangle or half moon. We brush the duo with oil and bake. The filling is ground beef or lamb, stewed tomato’s, diced onions salt, pepper, cinnamon, mixed spice, all spice, cumin, and sometimes mint. One of my sister’s made these.

I was able to go up and see Dad for a few minutes. He had another bleed where the tube was input. I think that scared him. He is quite weak and tired so I left him to have a sleep. Wayne

I've been holding off on updating on Dad's condition until we really had something to report. He had quite a few hard days while they were trying to drain the fluid from around his lungs and heart. The ward Dr on the floor wanted to release him and he refused and the Dr agreed to let him a couple more days. My Dad's Cardiologist came into see dad and told him he will be going on the dialysis and he would straighten out the Floor Dr. Thursday Dad had a line put in his chest to receive the dialysis Friday morning he had a bleed at the entry point and had to have a few stitches. This morning he had his first dialysis treatment. He is very weak but sits up and can Face-time us. He keeps telling everyone who will listen he has too many Grand babies to love and he is not leaving this world yet. He is a beautiful person with the biggest heart. God only knows how long he will be here. Every hour, day, week. month is appreciated. My Family and I want to sincerely thank everyone for their prayers and kind wishes. Wayne

He just Face-timed me. He had a great sleep this afternoon. He loves the hospital food. I'll bring him roast chicken and vegetables tomorrow. We are so grateful he can contact us with his Ipad.

Thanks again folks. He's slowly coming around. They are still trying to get the fluid out of his lungs. He's been Face Timing us, it's good to be able to talk to him. They have to get rid of that fluid so they can move forward with the dialysis. He was told he will be in for a week just to learn the process. He has been told he must learn to use manual dialysis in case of a power failure but he will normally be on the machine every night while he sleeps. Man that's something to go through when your 88. He told them he wants to stay around because he has all these great grandchildren he has to love up! Wayne Here he is from left, my youngest brother, oldest brother, dad and myself. IMG_4885.MOV

Again thanks a bunch! Very much appreciate the prayers and kind words. he has his iPad with him that way he can contact us. That’s been a great tool to help stay in contact with him. I’ll be dropping off his sleep apnea machine this afternoon. Every time I drop something off the hospital has to disinfect everything. thanks again Wayne

Thanks everyone, he's a great man. Al we can do is see if this dialysis buys him a little more time. He still wants to stay around he loves the great granddaughters so much. He always loves the kids and the kids always love him. He is the last one of his of all his siblings. He is the only one who made it to 88. I believe on of his sisters lived to 82. We sure have been blessed to have him this long. Some folks tell nightmares about the Canadian health care but my family have had the greatest treatment. Yes we pay big taxes but in my eyes it's been worth it. Wayne

Just a quick note. I've been leaving in the middle of games lately. Both of My Parents are quite frail Mom is 85 and dad is 88. In the last 2 weeks My dad has been in the hospital twice. He has been in the hospital close to 30 times since totaling his car on, Dec 12. 2017. He suffers from Congestive Heart failure and Kidney failure both of these are directly related. It's been a long hard road for him over the last 15 plus years but the accident really played havoc with both of their health. It seems he will be going on Dialysis this week. We thought we were going to loose him last night. The reality is we will loose him sometime it might be days, weeks or months but it still hurts thinking about it. You see he is the most perfect father, loving, caring, compassionate, kind, strict, strong and god fearing. He loves all his children, grandchildren and great grandchildren. Last night I told him over FaceTime I loved him He told me he loves me and his family is his WHOLE WORLD. With Covid-19 I can not even go see him. Our area is in what they call code orange. So if you got a moment please think of him in your prayers if that is your thing, good vibes accepted as well. He would love that. If you love someone don't put it off tell them. Sorry for not being more attentive in game but I know you guys realize where priorities lie. Thanks Wayne
