Turned out great.  Too big for one pan, so cut them in 1/2 for 2 pans.  Chicago Steak seasoning, brown sugar; baked @ 250F for 4 hours, wrapped in foil.  Then turned-up oven to 350, removed foil & baked for another 1/2 hour, basting 3X.
