That fish was too big to keep. Weed is too pretty to go to JAIL!
I fillet my fish, cut them in chunks. I have a galic powder which really resemles corn meal, I roll the fillet in that dry don't wet the fillet. I then salt and pepper both sides. Finally I roll the fillet in flower again this is very dry no liquids. I then place the fillet on a hot cast iron pan in less than 1/4 inch of Olive or corn oil. Cook it crisp on both sides but make sure the pan is hot because you can not over cook your fish. A fillete from a 5 pound hish 2-3 min per side. Dribble lemon over your fish and enjoy. Sometimes I can do this when the fish has been out of the water less than 1 hour. Now that is FRESH!
I like eating this with a real good bread or oven baked potatoes. Cut the potatoes in 3/4 inch chunks, spray with oil, salt/pepper galic powder and what ever spice you like. Bale in the oven until you like them.
A nice quick salad. Cut up onions, some sort of sweet onion or long green ones. Salt and pepper them stir let them stand. Dice up some good tomatoes salt an pepper them and stir them with the onions. Let them stand 5-10 min. the juces will marry togeather. Add oil a lemon juice and crushed or diced mint leaves. Man I'm getting hungry.
