i never thought making jerky would be so easy and yummy!

my brother picked up a food dehydrator/jerky maker and started making beef jerky in it and wow! it work great!

and for what it cost to buy beef jerky at store, you cant beat the price.

3-4lbs meat.   eye round roast

1- cup soy sauce

1- cup worcestershire sauce

1 -4oz bottle liquid smoke (mesquite flavor)

1-tsp onion powder

1-tsp garlic powder

1-tsp crushed red pepper

1/2-tsp course ground black pepper

1/2 tsp ground cayenne red pepper

1st you start out with the meat sliced to about 1/4 inch thick and then mix up all the ingredients in measuring cup.

then pour into bag and add meat and mix it around some. then put in fridge for at least 8 hours.

after the 8 hours then remove and lay out on paper towels and also towel off top side and then shake some course ground black pepper

on one side and place on jerky maker.

leave in jerky maker for 8 hours( the temp gets to about 160F )

and then enjoy great tasting beef jerky for a great price.

wanting to try some deer and buffalo but haven't got around to finding some. but have done some salmon for niece and she loved it, same ingredients but only 4 hours in jerky maker.

Been making it on my smoker grill for many years. You don't need much heat and just keep the smoke heavy for 2-4 hours. You can finish it off in your oven if you need to on low heat around 125 degrees and it turns out great.

The trick to great jerky is to use very lean meat. The fat spoils quickly even with the brine, so the leaner the better.
