My dad used to make this for years. He made hundreds of pounds of it and GIFTED it to everyone he Metin his life. Doctors, neighbours, clerks, tellers, just anyone and everyone. He told me couple of weeks ago he had a craving so I had to oblige. I want to share this delicious recipe as it’s so simple to make. Please be WARNED this syrup will become EXTREMELY HOT! Use oven mitts when handling the bowl. This recipe or versions off can be found all over the internet and YouTube. I’ll add a YouTube video of my own, sorry it maybe a little unprofessional. Microwave Peanut brittle Ingredients: 1 cup granulated sugar 1/2 cup corn syrup we use golden syrup but the white clear will work as well. 1 3/4 to 2 cups of peanuts of your choice. We use salted blanched peanuts. This works very well with salted mixed nuts as well. 1 teaspoon butter 1 teaspoon baking SODA 1 teaspoon of vanilla It is very important to understand your microwave. The strength/wattage will determine your cooking time. My microwave is 1200 watts. You will need to adjust the cook times to accommodate your microwave. Prepare all measured ingredients before hand and grease a cookie sheet with butter or oil of your choice. It helps to butter the mixing spoon each time before mixing Combine the sugar and corn syrup in a deep microwave dish as the mixture will bubble up. Cook for 3 minutes on high. Using oven mitts remove HOT Dish add and stir in peanuts. Place a in microwave cook for another 3 minutes. Using oven mitts remove HOT dish add the vanilla and butter, stir in microwave cook another 2 minutes. Using oven mitts remove HOT dish add the baking SODA stir in and mix fast the mixture will foam and almost turn white. QUICKLY poor the HOT mixture on the greased cookie sheet and flatten as best as you can the mixture will harden quickly so you must work fast. HAPPY EASTER EVERYONE! Wayne

@iBrockI hear you big time! As most know my dad is a VERY FRAIL 90 and has been hanging on to life with both hands. I CHERISH every moment with him. Yesterday I made him his favourite peanut brittle. When he got home from dialysis he FaceTimed me. As weak as he was he had the biggest smile and couldn’t say enough about how he enjoyed my peanut brittle. I’m trying to live everyday like it might be our last together, sad really. So my question to my dad really wouldn’t be a question just ” I love you dad”

That’s a great catch on that small gear. Amazing those teeth didn’t cut the leader. #16 is a small hook but when they take a hold they work. The leader would have been the weak link in my mind. Rob what rod and reel setup are you using?

@SGTSmeg The trout I catch are originally from a Scottish lake. Loch Levin. These fish were stocked as pure stock and also hybrid with Atlantic Salmon. I’ll post a link to some incredible information from the 1930’s on the stocking program here in Canada at that time. The areas to look for are Saint John, New Brunswick, Loch Lohmand lake. SADLY some A-Holes introduced small mouth bass into this fishery. Don’t get me wrong I enjoy fishing small mouth bass but these lakes have map now been effected by the illegal introduction of the small mouth. Sorry for getting off track. The best way for me to prepare the fish. Never let your fish sit. I fillet my fish, get rid of the skin (fishy smell). Pull any remaining small bones you may have missed when you filleted them. I heat about 1/4 inch of cooking oil in a cast iron fry pan. Most times I cook it in the BBQ. I use salt, pepper garlic powder on the fillet then coat with a light dust of flour and fry. I also use Montreal steak spice and flour to change it up. Both are absolutely delicious with NO FISHEY flavour. I use both these recipes on all my fish, grouse, pheasants, ducks, geese and woodcock. Everyone I have fed this to always wants more. Most of the time I would serve all this wild game with home made deep fried fries. Mmm! @RobMc ‘s recipe sounds great too. When you scale a fish it actually removes the scales AND fish slime removing a lot of that fishy smell.

@RobMc WARNING SEVERAL FISH WERE HARMED IN THE MAKING OF THIS POST! The lake I’m interested in opens May1 st every year! That’s damn cold but can produce some nice Brown trout and Landlocked Atlantic Salmon. last years May1 & 2 catch!

Although I appreciate the fact that the MAJORITY of the world LOVES coffee I can say I’ve only tried coffee twice in my life! THE FIRST TIME AND THE LAST TIME WAS THE SAME TIME! Same goes for tea. Now alcohol was a different story. I did give it an honest effort but “NOT MY THING”!
