Pan-Seared sausage, 1-hr. caramelized onions, over easy eggs mixed in, White American cheese, some mayo & pepper.  Searing the sausage (Maillard Process) & caramelizing the onions takes the sammich to a higher level.  (I caramelize a bag of onions at a time, then freeze them in ice-cube trays, so that I can have them when the hankerin' hits.)  Such a good call & well-worth the hour's effort.

It doesn't look so great, but those onions take restraint; taste so good, you could eat those straight outta the pan.

Nice to hear someone else say Sammich !!!  But holy shit !!  I bet your arteries are 90% clogged like mine !!!

I don't eat like that often; also, I eat a big bowl of oatmeal at least once a day.  Helps absorb the bad cholesterol from your system before it takes residence in your arteries.  Other lipids &, especially noteworthy, carcinogens are also bound.  Gut viscosity, bile acid production, gut hormones, passage rate, fermentation & it's many complex interactions with the gut's immune system, etc. are also at play.  So much benefit from eating some oats every day.
