I'd given up Ribs as my New Years resolution (Truth be told, seemed like an easy way to give up something not good for me and say that I actually gave up something, my favorite BBQ place had just lost it's lease and been forced to close, a new one opened, and I can resist their ribs and go for other smoked delights) and of course as luck would have it, a buddy of mine got a smoker last year and now is hell bent on perfecting his rib cooking skills and I've been invited out twice so far, the first time is when is when my resolution fell.  He is doing some great smoking of this stuff, OMG.  To top it off another great local BBQ place was almost shut down and saved again from the pile of the ' formerly good but poorly run and now dead ' by a local business man who brought it back from the dead and ratcheted their stuff up to 11. FUCK, more great RIBS!

Brother, it's protein...gotta have your protein; if you want to cut back on anything for your health...it's NOT protein you need to be watching out for...it's those carbs, starches(carbs) & saturated fats.  To make the ribs 'healthy', you cook them low & slow @~250F for about 4 hours, wrapped in foil to break down the collagen & render most of those fats...then crank up the heat to 350 for about 1/2 hour with the foil off to caramelize your sauce of choice & render most of the remaining fats.  Also, fiber helps absorb cholesterol from your system...so eat some oatmeal for a snack or something to hold you over while those ribs are cookin'!  Can't stop the bbq!

I'm already on a low carb regimen, lost 65lbs in the last 222 days or so, it was the fat that I was talking about.
