Here's a great one! Peach Hefewiezen (AKA Peach Pantie Peeler) 5 lb.s Wheat Malt 4 lb.s 2-Row Pale Malt Mash @ ph 5.2 with 13 quarts @ 149F Fly sparge with 15.5 quarts @168F .75 oz. Hallertau hops boil 60 mins 1 vile of White Labs WLP300 Hefeweizen Ale yeast (1L starter the day earlier for best results) Ferment @ 64F to 66F for clove flavor notes, 67F-72F for banana notes. Add peach puree in secondary or, leave it as is for a perfect traditional Weissbier/Hefewiezen Water volume 28.5 qt.s Batch size 5 Gallons Brewhouse efficiency 70% OG 1.048-50 FG 1.007-09 ABV 5.9% IBU 12 This is a fan favorite in the spring and summer. Yeah I'll take a medal, like I need another one. LOL Entry Level Brewing Is Not That Much Work Beers... You should try an India Pale Ale made from Extract & Some Specialty "Crystal" Malt. Use Fuggle Hops (williamette if you cannot find them) To Bitter & Goldings To Finish... Use 2 Cans 4lb Alexanders Light Malt Extract & 3/4 lb of 40 to 60 L. Crystal Malt. Steep the Crystal Malt at 155 F in a Grain Bag For 30 Mins in 1 1/2 Gals of water. Remove Bag of Grains & Add 5 more Gal & bring to a boil. Then add malt extract from cans (stir the kettle while you add!!!! otherwise you will scortch the malt at the bottom of the kettle). Bring to a boil, then add Bittering hops. Boil 60 mins & add finishing hops. Cool, Ferment (In a 6 gallon Glass Carboy) & enjoy. My Favorite Yeast Is Liquid Culture Wyeast #1968.... RooflessKilla 1 Awards

You can "shoe-string" it on the equipment using an inexpensive kettle and a 5 gallon bucket to ferment or buy an equipment kit for under $100. Using dry or liquid malt extracts as your base malts instead of malted grain (which requires mashing) to further reduce the time and work involved, as well as the required equipment investments you need to mash. You can start saving brown, pry-off bottles ahead of time and you can save your bottle investments too. A case of empty bottles costs nearly as much as a case of beer! You may have a couple or 3 hours of work into a recipe like this if done with extracts. If you take out the honey ($10) and the peach puree ($15), and if you use yeast from a prior batch, you can save another $6 and you'll have a really nice traditional Bavarian beer that costs about $15 to make 50+ 12 oz. bottles ($.30 a beer). It will taste so good you won't believe you made it in yer kitchen. This Traditional Hefewiezen is a perfect example of how sometimes the simplest and more tradition recipes can be the best! Haven't brewed my own for quite a while. I used a large plastic tote size container in my basement to ferment in which made up 5 cases at a time. Never really had a favorite brew as I liked to try different stuff. Not that difficult for those looking to do it. Just need some time and cool space as temperature is very important. It smelled absolutely heaven when we were making the wort. Oh, and we did something really cool. Right after finishing the wort, you put some in a mug with some whisky (like 2 part wort for 1 part whiskey). It's something fierce indeed to drink! But totally amazing! And yes, served hot... which was actually really nice since it was like 35 degrees out and we were freezing our bums off. Spartacus 1
