I remember eating chitterlings at a friend's house when I was a kid; it tasted like a fart smells & I immediately spat it out. Bought a small shoulder roast this morning, quartered a large onion, tossed in a pint of beef stock, some Tapatio, some Tabasco, salt, & pepper, and 350 degrees in a Lodge dutch oven for a couple hours.
