Having monitored the oven when left to its own devices, it will cycle 50F+ above & below set point. Unacceptable for cheesecake. I don't use a bain-marie. I turn off the oven when the periphery sets & just blushes tan with the center still jiggly, & leave it in the oven with the door closed for 4 hours. Some might express concern about it being in the danger zone for so long, but it's a sterile environment & I've never experienced ill effect.
