New York Style Cheesecake

Rich & creamy
I bake in the glass casserole at 320F
I actually babysit the cheesecake as it's baking:  With a ThermoPro temperature probe in the oven, I manually turn-on the oven when it drops below set point & turn-off when it's 10 degrees above.
Having monitored the oven when left to its own devices, it will cycle 50F+ above & below set point.
Unacceptable for cheesecake. 
I don't use a bain-marie. 
I turn off the oven when the periphery sets & just blushes tan with the center still jiggly, & leave it in the oven with the door closed for 4 hours. 
Some might express concern about it being in the danger zone for so long, but it's a sterile environment & I've never experienced ill effect.
I then set it in the fridge overnight to set, then pop it out of the casserole & cut with dental floss.
