Weed’s Dad’s Favourite Peanut Brittle!

My dad used to make this for years. He made hundreds of pounds of it and GIFTED it to everyone he Metin his life. Doctors, neighbours, clerks, tellers, just anyone and everyone. He told me  couple of weeks ago he had a craving so I had to oblige.

I want to share this delicious recipe as it’s so simple to make. Please be WARNED this syrup will become EXTREMELY HOT! Use oven mitts when handling the bowl. This recipe or versions off can be found all over the internet and YouTube.

I’ll add a YouTube video of my own, sorry it maybe a little unprofessional.

Microwave Peanut brittle 

Ingredients:

1 cup granulated sugar 

1/2 cup corn syrup we use golden syrup but the white clear will work as well.

1 3/4 to 2 cups of peanuts of your choice. We use salted blanched peanuts. This works very well with salted mixed nuts as well.

1 teaspoon butter

1 teaspoon baking SODA

1 teaspoon of vanilla 

It is very important to understand your microwave. The strength/wattage will determine your cooking time. My microwave is 1200 watts. You will need to adjust the cook times to accommodate your microwave.

Prepare all measured ingredients before hand and grease a cookie sheet with butter or oil of your choice. It helps to butter the mixing spoon each time  before mixing 

Combine the sugar and corn syrup in a deep microwave dish as the mixture will bubble up. Cook for 3 minutes on high.

Using oven mitts remove HOT Dish add and stir in peanuts. Place a in microwave cook for another 3 minutes.

Using oven mitts remove HOT dish add the vanilla and butter, stir in microwave cook another 2 minutes. 

Using oven mitts remove HOT dish add the baking SODA stir in and mix fast the mixture will foam and almost turn white.

QUICKLY poor the HOT mixture on the greased cookie sheet and flatten as best as you can the mixture will harden quickly so you must work fast.

I love Peanuts but came down with diverticulitis 3 or 4 years ago and no more peanuts for me. But looks delicious...
