Has anyone got some good home made beef burger recipes ?

 

thought i'd start making my own,so at the moment i'm using

minced beef

onion

courgette

salt/pepper

mixed herbs

chilli flacks 

blackbean sauce

egg

 

as summer has finally arrived in the uk (well for a few days anyway). would be good to here your recipes.

In my standard burger I grate a 1/2 onion  into the 1lb hamburger before making patties. Makes them juicy even with real lean meat, also adds a nice crisp to the outer layer. Add cheese of course.

 

Here is an interesting twist from my Arabic heritage

 

1 lb ground

1 fresh lemon( never the bottle crap)

3-6 cloves of garlic

handfull of pine nuts

1/4 of a medium onion med/small choped

salt n pepper   lettuce tomato

 

Top with some homemade hummus instead of the traditional condiments

Are you grilling or pan frying? It make a huge difference on how you season them.

 

Regardless of which way you make them, use a ground beef with a high fat content otherwise you'll have very dry burgers. I always use what we call here in the states "ground chuck". I always grill on lump charcoal and season the beef patties with a little soy sauce, red wine vinegar, garlic powder and paprika. While they grill I thow on a little fruit wood for a sweet/smokey flavor. Any fruit wood will do but my favorite is apple.

cooking on a gas BBQ . and the pine nuts sounds good addition. gonna try your recipe at the weekend damit if i get a chance.

and get some more fatty beef as the stuff i just used was a premium steak mince. still dame better than shop bought ones.
