LOVE, LOVE, LOVE, Caramelized onions.. . . . . 30 minutes later, add a skosh of sugar to enhance the caramelization . These 2 onions have cooked down considerably & will add much yum to the meal: . . . . Deglaze with some white cooking wine to get all the good stuff into a reduction sauce... . . . . What else good? Black Forest Ham! Let's get a slab of that! . . . . . . Get that iron nice & hot for that Maillard action... . . . . . . Freshy grated Asiago & ground black peppercorns make such a difference . . . . . . . . Ham is done browning & the alfredo sauce has made nice with the caramelized onions... . Almost time to eat, just one more thing... . . . . . Once you've used freshly-grated, nothing else will do.. . . . . . Unbelievably good! . . . Letting the onions have their time to slowly cook over 45 minutes is what takes the most time & patience to not let them burn. Forgot that I was out of caramelized onions. So I got another bag of onions, cooked them down & then froze them in an ice cube tray, putting the onion cubes in a zip-loc bag & into the freezer for whenever I want them for a recipe.
