Yep, I used to be a chef for a living. Boneless chicken thigh with some blend of spices as follows:

Pataks Vindaloo

Sambal Oolek

dash of kosher salt

dash of fine white sugar

 

I added the sambal oolek for extra heat and the sugar to get the cripsy black parts I like on a BBQ Chicken. But it is mainly covered in vindaloo spice.

If you can't find it anywhere try this recipe from Jamie Oliver's site:

 

Vindaloo paste
2 cloves of garlic

a thumb-sized piece of fresh root ginger

4 dried red chillies

1 tablespoon turmeric

½ teaspoon sea salt

3 tablespoons groundnut oil

2 tablespoons tomato purée

2 fresh red chillies

a small bunch of fresh coriander


Spices for toasting :

1 teaspoon black peppercorns

4 cloves

2 teaspoons coriander seeds

2 teaspoons fennel seeds

1 teaspoon fenugreek seeds

How to make the above curry paste
First peel the garlic and ginger • Put a frying pan on a medium to high heat and add the spices for toasting to the dry pan • Lightly toast them for a few minutes until golden brown and smelling delicious, then remove the pan from the heat • Add the toasted spices to a pestle and mortar and grind until fine, or put them into a food processor and whiz to a powder • Either way, when you’ve ground them whiz the toasted spices in a food processor with the rest of the ingredients until you have a smooth paste

 

I use the broiler in my oven for this. line a cookie sheet with tinfoil. adjust broiler tray so the chicken is at least 3/4" away from the flame.

10 minutes fatty side up.

5 minutes other side.

 

Serve with COD of Dirty Rice (as follows):

Saucepan of water (@4-5 cups)

bring to a boil and add in the following:

1 cup rice - i like basmati rice for indian style food

1 tsp chicken stock paste or a chicken bullion cube

1 fat tsp sundried tomato pesto OR a tsp tomato paste

cook for 9-10 minutes. (time it)

 

Drain remaining water put rice in a mixing bowl and add:

1 tblsp butter

1 tsp cajun spice I use: Tony Chacher's Creole Spice blend or you can substitute, granulated garlic, salt, pepper, cayenne blend

 

mix well and enjoy. Took me a total of 15 minutes if you start the rice water to boil as soon as you put the chicken in.
