I went fishing for fluke off of Fire Island this morning. I kept 2 nice fish for the table. Great weather, a beautiful day to be out on the ocean.

On a cookie sheet I spray a little pam, lay the fillets down with a little salt and pepper and a sprinkle of seasoned bread crumbs. Pour a little bit of melted butter on top. Bake in an oven at 350 for about 15 mins or until flaky. Then squeeze some fresh lemon juice on and eat.

I also like them breaded and fried in oil on a fresh roll with lots of home made tartar sauce. Awesome sandwich with lettuce and tomato.

We call those flounder on the left coast. If they get really big we call them halibut. Either way, delicous.

I Like To Dredge Them In Flour, Dip Them In well beaten eggs, Then Into Breadcrumbs (Plain or Italian). Lay them in a Pan with 3 or 4 tablespoons Olive Oil & 1/4 Cup White Wine mixed in bottom.

Top Fillets With 2 Small Squares of Butter & Bake at 425F. For 15 to 20 mIns....

When both species are very small babies they look like normal fish but as they mature one eye migrates to the opposite side depending on the species. On either the left or right side. I’ve netted some babies about an inch long and their eyes are on one side already but surprisingly you can see right through them. They look exactly like a mature flattie. In and around New York waters Winter flounder are fished in spring from April 1st to May 30th. Summer flounder (fluke) are fished from May 1st to September 30th.

 

If the ocean lies down somewhat I’ll be going for bluefish and striped bass this Saturday night. Otherwise I’ll wait for it to die down. The winds are forecast 15 knots and 5 foot seas. That’s a bit too snotty for me.

ODD the Canadian Gov calls Halibut exstinct. Hold on some Basturd changed the name and I never got the memo frig and to think I've been eating preassed fish fron Capt Hindgrinder ever since. Da BAsturdsssss

Nope I didn't but the larger fish was about 4 to 5 lbs.
