Dear Mods, Admins, Clan Members and friends of XI: I thank all of you for your support and patience during my position as a Mod and Admin. It's been a great experience. It is apparent to me it is time to move on and let some one with less wrinkles to take over. XI is a great clan that will last for many years to come. Timmah loves spicy food, but Sage is my favorite for sausage biscuits & gravy; it's the perfect seasoning for it. Can't stress enough the importance of cooking & stirring the flour for a good 5 minutes to properly develop the flavors. Also, searing/browning the meat is a must for this & just about any other dish's meat for that wonderful Maillard flavor!2 points -

Biscuits Pound of sausage (Tennessee Pride Hot, this time) Couple tablespoons of butter ~1/3 cup flour 3 cups milk Seasoning Brown sausage, add butter & stir for a couple minutes, add flour & stir for a few minutes until browned & bubbly, slowly add milk while continuously stirring--about 5 minutes. Add salt, pepper etc...start with a pinch of each.1 point -

Adding more fat with butter may seem counterintuitive, but even if you drain some of the sausage fat first, the butter adds a unique richness. And of course, the flour has to cook long enough to brown & lose its flour taste & contribute its own depth as it absorbs the pork & butter. The ratios I give is a good starting point. Honestly, when I saw your title of this, I went to HOT BROWN, convinced that was what you were going to be showing... I lived in Lexington, KY for college, and we went to Columbia Steakhouse all the time. The Hot Brown is what we college kids wanted mostly lol. I am so proud of my husband @P1nh3ad. I have been asking for a new bathroom for years. So after months of orientating we started to renovatie our bathroom mid of february. Exactly one month later he finished it, and it looks even more beautiful then i imagined it. So i would love to share this masterpiece with you. He renewed the plumbing, floor, made a new wall between de walk-in shower and the toilet, and everything else, too much to mention. Last picture is the old bathroom.1 point

I hate Steam!

So, after I got a new operating system years ago, Windows10, my old disks no longer worked. So, after giving up, I purchased through Steam and haven't had too many issues and I never really use it, ever, except for COD2. But today when I went to play COD2 and it wouldn't run - it doesn't unless Steam is running. So, after I couldn't log in , did the usual "forgot password". When attempting to reset, it said "no account" with this PW. WTF?! Out of the blue, my account is gone. Is this a way to get you to buy again. And $19.99 for a game over 20 years old? So, waiting for them to "fix" whatever they broke! Sorry, had to vent. has anyone had this crap with Steam?0 points
