I have been doing a lot of cooking on the smoker this summer since it's been so hot here Arkansas. Trying to keep the stove and oven turned off as much as possible to keep from creating any more heat for the A/C to contend with.

Here's a couple things I did, including apple cake, and apple pie, and cornbread.

I do have to say, that it was all awesome, but next time the apple pie will need cuts in the crust to let a little more smoke into the apple filling. I cooked every weekend for almost 2 months, and microwaved it most of the week for lunch and diner, so much so, that it does not matter what we heat in the microwave, that it now smells like oak smoke when it's running, LOL.

The food looks great. I almost ditched my gas grill and bought a new one after it wouldn't heat over 200 degrees. Luckily I went online and did a google search. Evidently there is a safety valve inside the tank that had actuated and reduced the amount of gas output so I couldn't blow myself up. I just had to close the valve, disconnect the tank from the hose and open all of the burners for about 10 minutes. Reconnected everything and it was as good as new.

I had a few smokers, then went to propane and for the last 15 years or so I went to natural gas.No tanks to chnge no charcoal to start BUT I still think that charcoal gives the best flavour.Nice looking ribs you got there simplemod.

I own a $1,500 stainless steel natural gas grill that I have barely used since I bought it several years ago. I also own a $400 smoker grill that I use at least a couple times a week. There just isn't any comparison on the heat and the flavor. The gas grill is now a big condo for spiders and rodents.

We have gas cook stove and oven in the house, so I don't want a gas grill outside. I like charcoal or wood. I had a bunch of trees cut this spring, and i have been slowly cleaning it up and using it to cook with all summer. my neighbors probably think I'm nuts, but i just walk out in the yard and pick up sticks, and go start a fire in the smoker box, and start cooking. But I have only had to buy 1 bag of charcoal all summer, and I've been cooking every weekend for the last couple months.

Hope you don't get any poison ivy in that wood. That could bring a whole new level of enjoyment from your supper. ;)

I think Loader is good with "rubs" but that's probably not the type of rub you're looking for.

I use What's This on roasts, but sometimes, I will poor a RC Cola on it in a pan with some whiskey. Then add the spices. I cook it open for 3 hours or so, then cover it and cook another 3 hours or so. last time I added some Caribbean Jerk Marinade, and some mustard and a tiny bit of liquid smoke, and soy sauce. Cooked about 7 hours, it was actually a beef roast that time, but it was so tender I couldn't cut it
