I generally prefer Memphis style but I have a simple rib method that involves glazing. Dry rub, three hours on the smoker on high smoke - apply glaze, cover with tinfoil, smoke for another two hours - remove tinfoil, glaze again, and smoke another hour or so. These came from a farm down the road that we buy meat from once a month. Glaze is simple: maple syrup, ketchup, mustard, and black pepper.
