Separately whisking the whites until they form peaks, then folding those into the yolks always worked best, for me, to make a fluffy omelet.

old recipe from my grandmother, scrambled eggs with bacon strips (sliced in small trips or small cubes), with cream, potatoes and unions. and lit it heat up in the frying pan while you keep mixing it all together. some even top it off with some cheese

I put a little milk in my 5 egg omelets. It makes it light and fluffy.

I challenge you @Timmah! to eat an entire Ostrich egg omelet. With equal portions of onions, green peppers, ham cut into small cubes or Honey Ham Lunch Meat, cheese (your choice) and a couple diced mushrooms. Add a healthy shot of original Tabasco sauce to take neutralize most of the Gamy Ostrich egg taste.

I used a 12.5" T-Fal frying pan and I had a hell of a time trying to flip it and get it out of the pan without making a huge mess.

It will make a ridiculously H U G E ! omelet lol. They are roughly equivalent to 24 medium/large chicken eggs.         

I still can't believe I managed to cook and eat an entire Ostrich omelet. I was pretty much comatose for about 6 hours and I lost my appetite for Omelets for quite a while after that. lol

Back in the day, when I worked at the local park, I made an omelette from 2 geese eggs.  It was huge & tasted like chicken eggs on steroids or something.  Str0nger flavor.  If we're doing challenges, I dare you to ride an Ostrich bareback.

Fuck that. The last time I got close to one of those evil red eyed bastards the thing tried to eat me. It ripped my hat off and pecked me on top of my head. Fucking hurt to. One of my moms friends used to have 3 of them and a pair of Emu and a bunch of those fainting goats. Those goats were funny as shit. lol

I remember being around 10 & looking at the Ostrich @ the Louisville zoo...was noticing how long it's eyelashes were as it bent down & pecked me in the head.  Fucker.  I swung at it, it dodged;  think it had practice.
