With this recipe, I learned about 'high-ratio' preparation method; where you don't have to bother with creaming the butter with the sugar first. You just mix the dry ingredients, then add all the butter & 1/2 the liquid; mix...then add the remaining 1/2 of the liquid in 2 intervals. Much faster. Very similar to the recipe I used; Glad I found the advice to drop the temp by 25 degrees since I was using a Pyrex dish. Have you tried the high ratio method?....maybe try it once and tell me what you think. I purchased 2 cook books during home economics in the 70's. I still use them today. After my mother passed in 1986 my father divided her cook books with my sisters and I. We were shocked because through out our entire lives we never seen our mother use any recipes. She used her hands and fingers for everything with a pinch of this dash of that and her palm for cups. When we looked through her books she had written in them. She changed the recipes to her way LOL Her being from Scotland we had her baking experience of tablet, pastries, scones, everything she baked basically was from the UK !!! She worked at the second Tim Horton's that was built for over 25 years. She met Tim Horton a week before his accident. Below is my recipe that I use. It's a old family recipe and makes one of the bigger pound cakes. 2 sticks butter room temp 1/4 cup Crisco 6 eggs room temp 1 cup milk room temp 3 cups plain floor pinch of salt 3 cups sugar 1/2 tsp baking powder, but I add another 1/2 tsp to mine. 1 tsp lemon flavoring or 1 tsp vanilla flavoring, which ever you like or you can add both. Cream butter,crisco and sugar, add eggs one at a time . In another bowl I mix flour, salt and baking powder. Then I mix it all together and add flavoring. I normally do lemon that's what they like the best. Put in a greased and floured pan and bake at 325 for 1 1/2 hours.
